You don’t have to soak these dried beans overnight!

Ingredients:

beans
  1. 1 onion, peeled and halved

  2. 2 cups dry pinto beans, rinsed

  3. ½ fresh jalapeno or other hot pepper, seeded and chopped

  4. 2 cloves garlic, minced

  5. ¾ teaspoons salt

  6. ½ teaspoon black pepper

  7. One big pinch of cumin

  8. 6 cups water

Instructions

  1. Combine all ingredients in slow cooker.

  2. Cook on high for 8 hours or overnight while you are sleeping.

  3. Remove the bigger onion chunks and drain the excess liquid. If desired, save excess liquid until the final product is desired consistency.

  4. Mash remaining beans with a potato masher and voila! You have homemade refried beans.

Ingredients:

  1. 2 cobs of organic corn (steamed, grilled or raw), cut off the cob* (about 2 cups)

  2. 1 red pepper (grilled or raw), sliced into 1/2 inch cubes

  3. 1/4 cup parsley, chopped

  4. 1/4 cup cilantro, chopped

  5. 1/4 cup fresh lemon juice

  6. 2 tbsp olive oil

  7. sea salt, cayenne, and/or hot sauce to taste

Directions:

  1. Place all ingredients in a bowl, toss and store in the fridge.

This salsa will be better if allowed to sit for 1-2 hours before serving. But good luck with waiting!


Corn Salsa
Macaroons

Ingredients:

  1. 1 banana, finely mashed

  2. 1/4 cup coconut oil, melted

  3. 1/4 cup pure maple syrup (or other liquid sweetener)*

  4. 1/2 tsp pure vanilla extract

  5. 6 tbsp cocoa powder, sifted

  6. 1.5 cups unsweetened shredded coconut

  7. 1 tbsp chia seeds (optional)

  8. small pinch of fine grain sea salt, to taste

Directions:

1. In a medium mixing bowl, mash the banana until most of the clumps are gone. Stir in the melted coconut oil, maple syrup, and vanilla.

2. Sift in the cocoa powder and stir until combined. Now stir in the coconut, optional chia seeds, and fine grain sea salt to taste. 3. Line a baking sheet with parchment paper or a non-stick mat. Scoop rounds onto the sheet. Place sheet in the freezer for around 20 minutes, or until macaroons are firm. Store in the freezer until ready to enjoy. They will soften at room temperature.

Note: 1/4 cup pure maple syrup results in a lightly sweet macaroon. Feel free to adjust the sweetener to your own taste buds, especially because some cocoa powders may be stronger than others.
